So I have read a few blogs that have a weekly thing they try to update on. I am going to attempt to keep this up. Everyone has those quick easy meals that they throw together and usually cook twice a month or so...right? I love getting ideas from people for quick and easy week night meals. This is what we cooked up last night..sorry for no "during" pictures.
Baked Tilapia with Green Beans and Rice Pilaf (total time=30-45 min...total cost=$15)
Ingredients:
2-3 Fresh pieces of Tilapia
Old Bay Seasoning
Pre-cut and washed green beans in a bag
1 carton of grape tomatoes
1 package of Uncle Ben's 90 second rice pilaf-(don't judge its easy and tastes the exact same)
Steps:
Start out by preheating the oven to 375. Take the grape tomatoes and cut them in half, then mix with the green beans, drizzle olive oil over them and place in the oven. I only did ours for around 20 min and they were kinda hard so I would say give it a good 30-40 min depending on how hard or soft you like your veggies. Next coat your fish with a layer of olive oil on each side then sprinkle each side with Old Bay Seasoning (more or less depending on your taste buds). Place on a non-stick pan and when your green beans have around 20 min left to cook place the Tilapia into the oven with them same temp and all. While the veggies and fish continue to cook its a perfect time to clean up your mess. Then when the timer gets to 4 min left follow the directions on the back of the rice bag and VoilĂ ! ...quick and easy.
