Chicken Parmesan, Teeny Tiny Potatoes served up with a Cesar Salad (bagged of course!!!)
The recipe for the Chicken is HERE
I had to change some things up from her's:
Chicken: I used Chicken Cutlets since they are basically breasts cut in half and so it saves you some time.
Breadcrumbs: I used Italian Breadcrumbs
Butter: I used the Zero Calorie Spray butter but just poured it into the bowl and heated it up since it was already in a liquid form
Preparation: The only thing I would suggest is if you have really thin cutlets to watch the time but everything worked for me as she instructed to do.
The recipe for the potatoes is HERE
Now this I totally changed it up when doing the preparation. I could not find tiny potatoes just baby ones and the bag they came in was 1.5lbs so I just added one more tablespoon of oil. Around ten min on low I saw that this wasn't going the way it needed it to so I turned up the heat to a medium to jump start the cooking process. So my suggestion is cooking on medium for around 30 min and then take it off the stove and let it sit for a another 5 and they were delicious but definitely wouldn't have been ready in 20 min sitting on low.
The recipe (haha) for the salad is HERE
I know it would have been prettier to do a different salad but this worked just fine. It also would have looked better to have it on the plate but salads that touch my food majorly gross me out.
Enjoy!
